Does anyone know what grade stainless steel Spiderco is using for their handles on their Delica knives? It engraves so nice and I would like to buy some for another project.

I know someone that knows someone at Spyderco that were asking, but they did not want to tell.. Factory secret, but I agree they engrave quite nicely. Also note they probably use different steel in their China models compared to their Japanese models.

Take it to a jeweler who has an XRF machine. Or maybe a scrap metal buyer that has an XRF.
With an XRF you can get a very precise overview of all the metals in an object. It will tell you exactly what % of metal X,Y &Z etc. So that way you can find out what alloy it is.
