GRS Belgium have beginner classes, but you also can find engravers nearby. I know Sergej Manayenko is from Germany, not sure which town, he teaches classes at GRS St. Petersburg and also private classes at his workshop.
Regarding sharpening, if you prefer sharpening by hand - you can do that, you can plug your grs gravers (with qc collets) into grs qc handle for hand engraving and sharpen as you are used to. However you should try sharpening with power hone and apex system to understand the difference and choose what will be best for you and your job)
