Happy Easter everyone.

I grew up in Siler City NC. Chatham County was the "Rabbit Capital of the World" in the first half of the last century. Your "chicken" salad on the trains was actually rabbit. Even the Waldorf Astoria served rabbit. The town seal had a rabbit on it, which was still on the 1939 Seagrave fire truck in use in as late as the early 1960s. Rabbits grew faster with less expense than the chickens of the day. And, yes, it tastes just like chicken. Now, Chatham County is chicken country. BUT YOU CAN'T HUG A CHICKEN!
