I am still struggling to control a 90 so this is mostly done with a small 116.

Really nice design on the practice plate. Well done.

As for using a 90 or any other V-graver, use whatever is comfortable and gets you the best results. Don't feel that using a 90 is a must when something else works better in your hand. There will be situations when a narrow V will be a better choice, such as background removal or cutting on a tight radius, but for work like you're posting just use whatever produces the best results in your hand. What works like magic for one person might not work nearly as well for someone else. For many years I used a 90 exclusively. Then I started using a 120 and reserved the 90 for background removal. Now I'm using EG105s and EG120s (EasyGraver) for all V-graver work.
