Try any of the transfer methods and print in yellow, red, or some other color. You can experiment until you find what works. I have found that red transfers very well but have not tried any other colors.
Practice plates are for practice. There are other sources of steel, than GRS, that are less expensive and will work fine. Some may like to make engraved pieces to show what they can provide to customers for examples. They may want better steel. Perhaps machine shops can provide some scrap...
I make my practice plates from steel that I buy at Tractor Supply and polish to them to 320 grit on a belt sander. I get their stock two inches wide and cut them to the desired length. They cut very nicely. They are made of mild steel.
